  • 500g Aged Long-Grain Basmati Rice

For the Royal Marinade:

  • 600g Chicken / Mutton / Paneer & Veggies
  • 1.5 tbsp Foodphenic Shahi Garam Masala
  • 1 tbsp Foodphenic Kashmiri Mirch
  • 1/2 tsp Foodphenic Salem Haldi
  • 200g Fresh Hung Curd (Whisked)
  • 1/2 cup Golden Fried Onions (Birista)
  • 2 tbsp Fresh Mint & Coriander Leaves

Step-by-Step Culinary Method

  1. Marinate for Peak Aroma (Minimum 1 hour): Coat the meat or vegetables with whisked curd, ginger-garlic paste, Foodphenic Salem Haldi, vibrant Kashmiri Mirch, and our stone-ground Shahi Garam Masala. The cold-ground spices penetrate deep into the fibers.
  2. Parboil the Rice (70% Cooked): Bring 5 liters of water to a rolling boil with salt, bay leaf, and whole Vietnamese Cassia cinnamon. Add soaked basmati rice and cook for precisely 6-7 minutes until 70% done. Strain immediately.
  3. Layer for the Royal Dum: In a heavy-bottomed handi, layer the marinated meat at the base. Top with 70% parboiled rice, fried onions (birista), fresh mint, saffron-infused warm milk, and 2 tbsp of desi ghee.
  4. Slow Dum Cooking: Seal the handi lid with wheat dough (dum seal). Cook on high flame for 5 minutes, then place a flat iron tawa underneath and cook on lowest flame for 30 minutes. Turn off the heat and rest untouched for 10 minutes.
  5. The Grand Opening: Break the dough seal. A golden cloud of authentic garam masala and sweet cassia aromatics will bloom across your entire kitchen!
